and welcome to my blog “MELLOW COOKING WITH RINI”
Mellow
means a soothing and comforting
experience and for me cooking is just that.
My
name is Rini Thomas and my loveeee for great food has led me to unchartered
territory of cooking after I became a mother. Before that I consider cooking as
just a chore (to be dealt with) and when helping my mom in kitchen, I use to
take up the job of chopping of veggies, grinding of whole masala’s on stone
grinder (typical in south Indian households), making roti’s, etc. but never
actually cooking. (Perks of being a studious
child among your siblings)
My
mother’s home cooked kerala chicken curry was and still is the epitome of
happiness for me. The smell of sauteed onions, her special masala mix slowly
roasting on low flame would fill the entire house with aroma which could
brighten even the dullest of my days.
I even introduced myself to my husband as a
foodie and was guilty of often saying (as like most of the non cooks say)
“Khana
pasand hai banana nahi” (translates to love to eat but not cook)
In
September 2016, we welcomed our baby boy Ronit, who is the sweetest sack of
sugar and has made us the happiest family.
It
was post my delivery during my maternity break that I realized how satisfying
the process of cooking and serving it to your loved ones can be. You-tube
videos and food blogs were great help for a new cook like me with lots and lots
of hit and miss dishes.
However, the real task began when my baby
started solid feed and

………“he is a fussy eater”
The
mother in me felt helpless which is when I started exploring and experimenting
with recipes and coming up with easy to make, full of flavor and even
nutritious
dishes.
So,
why blogging?
The
answer is simple "you can't just eat good food you need to talk about it
too".
Sharing
my recipes and go to cooking tricks might help anyone familiar or unfamiliar
with mellow cooking.
Growing
up I had a lot of food options ranging from typical south indian food to
mouthwatering northern delicacies. I'm a kerala MALAYALI by roots, born and brought up in the mughlai
cuisine influenced BHOPAL. So, you could say I have experienced the best of
both worlds.
I am
totally self-taught and have no formal culinary training, just tons of mess-ups
in the kitchen. My younger sister Cinu and Ronit are official food tasters of
most of my recipes, but by no means I claim to be a culinary genius.
